R E S O L U T I O N
1-1 WHEREAS, Levell L. "Bud" Wheeler is retiring from his
1-2 position as director of Texas Union dining services, drawing to a
1-3 close a distinguished career that has spanned more than three
1-4 decades; and
1-5 WHEREAS, This exceptional individual was graduated from
1-6 Oklahoma State University with a bachelor's degree in hotel and
1-7 restaurant management; and
1-8 WHEREAS, He began his career in 1959 as a relief manager for
1-9 Howard Johnson Restaurants, and his area of responsibility while
1-10 employed in that capacity spanned the states of Oklahoma,
1-11 Arkansas, Missouri, Michigan, and Colorado; and
1-12 WHEREAS, Relocating to Texas in 1964, Mr. Wheeler displayed
1-13 the remarkable flair for food preparation and management that has
1-14 been the hallmark of all his many endeavors, and his exceptional
1-15 work consistently delighted patrons at the Downtowner Motor Inn in
1-16 Midland and at several other restaurants in the Dallas-Ft. Worth
1-17 area; and
1-18 WHEREAS, Seeking new challenges in the demanding field of
1-19 food services, Mr. Wheeler took his talents to the University of
1-20 Arkansas and Oklahoma State University before coming to The
1-21 University of Texas in 1984 as director of food service for the
1-22 Texas Union; his unique abilities as a chef and administrator were
1-23 ideally suited to serving college students, whose constraints with
1-24 regard to time and budget create an enormous challenge for those
2-1 who must see to their nutritional needs; and
2-2 WHEREAS, While catering to the needs of college students for
2-3 more than 25 years, he also has become renowned for his superb
2-4 sauces and has earned special distinction for creating
2-5 palate-pleasing sauces named after such notable figures as Henry
2-6 Cisneros and Ernest Boyer; and
2-7 WHEREAS, For his unsurpassed excellence in the art of food
2-8 preparation, Mr. Wheeler has received many well-deserved accolades,
2-9 including Chef of the Year by the Capitol of Texas Chefs, the Chef
2-10 Professionalism Award, the N.R.A. Great Menu Bronze Award, and the
2-11 N.A.C.U.F.S. President's Award; he also earned designation as a
2-12 Certified Executive Chef in 1989; and
2-13 WHEREAS, Possessed of outstanding leadership ability,
2-14 Mr. Wheeler served with distinction as chairman of the board of the
2-15 American Culinary Federation Capitol of Texas Chefs from 1991 to
2-16 1993; and
2-17 WHEREAS, Mr. Wheeler is a highly respected professional in
2-18 his field and has maintained active memberships in such
2-19 organizations as the American Culinary Federation, Food Service
2-20 Executives, and the National Association of College and University
2-21 Food Service; and
2-22 WHEREAS, As Mr. Wheeler begins his well-deserved retirement,
2-23 he can indeed look back with tremendous pride and satisfaction on
2-24 his exemplary career as a chef and administrator; now, therefore,
2-25 be it
2-26 RESOLVED, That the House of Representatives of the 74th Texas
2-27 Legislature hereby congratulate Levell L. "Bud" Wheeler on his
3-1 exceptional tenure as a chef for the Texas Union at The University
3-2 of Texas and extend best wishes for a happy and rewarding
3-3 retirement; and, be it further
3-4 RESOLVED, That an official copy of this resolution be
3-5 prepared for Mr. Wheeler as an expression of high regard by the
3-6 Texas House of Representatives.
