R E S O L U T I O N
 1-1           WHEREAS, For half a century, The Old Warsaw restaurant in
 1-2     Dallas has offered diners a tranquil and constant setting featuring
 1-3     the grace and cuisine of a bygone era; and
 1-4           WHEREAS, Founded in 1949 by Polish diplomat Stanley Slawik,
 1-5     the restaurant was meant to recapture the serenity and ambience of
 1-6     his native country's capital before World War II; though Mr. Slawik
 1-7     sold the restaurant in 1970, each successive proprietor has
 1-8     remained equally committed to the old-world charm, elegance, and
 1-9     pleasurable offerings originally envisaged by Mr. Slawik; and
1-10           WHEREAS, The restaurant was hailed by The New York Times as
1-11     the  second-best in America in 1951 and was the first in Dallas to
1-12     be recognized for fine dining; The Old Warsaw's menu is built on
1-13     the classic techniques and components of what diners today might
1-14     call continental cuisine, though in  Mr. Slawic's day the
1-15     description was "French"; steak tartare, escargots,  sweetbreads,
1-16     rack of lamb, souffles, and crepes suzette have ebbed in and out of
1-17     favor with mainstream American tastes through the years, but they
1-18     have remained favored and excellently prepared fundamentals at The
1-19     Old Warsaw; and
1-20           WHEREAS, The atmosphere too is something from the storied
1-21     past, with strolling violinists, an opulent decor, and tuxedoed
1-22     waiters providing tableside preparation and service of timeless
1-23     standards such as Caesar salad; and
1-24           WHEREAS, To remain successful through five decades of
 2-1     changing American tastes and eating habits is a monumental
 2-2     achievement for any restaurant, but especially so for one as
 2-3     committed to dining excellence as The Old Warsaw; as this grand
 2-4     establishment begins its 51st year in the business of fine dining,
 2-5     it is indeed a great pleasure to honor that achievement; now,
 2-6     therefore, be it
 2-7           RESOLVED, That the House of Representatives of the 76th Texas
 2-8     Legislature hereby recognize The Old Warsaw restaurant on the 50th
 2-9     anniversary of its founding and extend to the restaurant's owner,
2-10     Al Heidari, and executive chef, Clemente Sanchez, warmest best
2-11     wishes for continued success and happiness; and, be it further
2-12           RESOLVED, That an official copy of this resolution be
2-13     prepared for the restaurant as an expression of high regard by the
2-14     Texas House of Representatives.
