R E S O L U T I O N 1-1 WHEREAS, The passing of Johnny S. Cace on November 21, 2000, 1-2 at the age of 83, deeply saddened the family and many friends of 1-3 this beloved family man and respected Longview restaurateur; and 1-4 WHEREAS, Born on January 8, 1917, in New Orleans, Mr. Cace 1-5 spent childhood summers learning to harvest oysters, catch fish, 1-6 and cook while working with his father at the family's oyster camp; 1-7 he graduated as salutatorian from Buras High School and attended 1-8 Louisiana State University, after which he moved with his family to 1-9 Shreveport to open an oyster and seafood market that thrived during 1-10 the challenging Depression years; and 1-11 WHEREAS, This patriotic American served his country as a 1-12 member of the United States Air Force during World War II, calling 1-13 upon his culinary skills in his capacity as a mess sergeant; and 1-14 WHEREAS, In 1949, Mr. Cace moved to Longview and opened the 1-15 37-seat Johnny Cace's Seafood & Steak House; he remained actively 1-16 involved in the business and oversaw several expansions of the 1-17 ever-popular eatery that increased seating to 450; and 1-18 WHEREAS, Deeply committed to his community, this generous 1-19 individual was a president, board member, and lifetime member of 1-20 the Longview Chamber of Commerce and a founder of Junior 1-21 Achievement of East Texas; he involved himself with the Boy Scouts 1-22 of America in the East Texas Area, the Longview Civitan Club, the 1-23 Longview Bank & Trust Company board, the Good Shepherd Foundation 1-24 board, and St. Anthony's and St. Mary's Catholic churches; he was 2-1 active with the Longview Council of Knights of Columbus and held 2-2 memberships in the Elks Club, the Pinecrest Country Club, and the 2-3 Delta Fishing Club; and 2-4 WHEREAS, Mr. Cace's professional affiliations encompassed the 2-5 Texas Restaurant Association (TRA), its state advisory council and 2-6 state board of directors, and the East Texas Chapter of TRA; he was 2-7 elected to the Texas Restaurant Association Hall of Honor, named 2-8 Outstanding Restaurateur in the State, TRA Man of the Year in 1967, 2-9 received the TRA Distinguished Service Award for 1967-1968, and was 2-10 named Outstanding Restaurateur in 1961-1962 by the East Texas 2-11 Restaurant Association; and 2-12 WHEREAS, His well-deserved civic honors include the 1999 2-13 Longview Partnership Chairman's Award, the Boy Scouts of America 2-14 Silver Beaver Award for Distinguished Service to Boyhood, the 2-15 Headliner Award from the Professional Journalists, Inc., and the 2-16 East Texas Heritage Award from the Festival in the Pines, Inc., and 2-17 he was named Man of the Year by the Longview Federated Clubs, Inc.; 2-18 and 2-19 WHEREAS, Residents of Longview will long miss this fine man 2-20 and he will surely be remembered with great affection and 2-21 admiration for many years to come; now, therefore, be it 2-22 RESOLVED, That the House of Representatives of the 77th Texas 2-23 Legislature hereby pay tribute to the life of Johnny S. Cace and 2-24 extend deepest sympathy to the members of his family: to his wife, 2-25 Margaret Gregory Cace; to his sons, John, Gerard, and Danny Cace; 2-26 to his seven grandchildren; to his sister, Rose Cace Sanders; and 2-27 to the other relatives and many friends of this beloved man; and, 3-1 be it further 3-2 RESOLVED, That an official copy of this resolution be 3-3 prepared for his family and that when the Texas House of 3-4 Representatives adjourns this day, it do so in memory of Johnny S. 3-5 Cace.
