R E S O L U T I O N
WHEREAS, Tom Perini, owner of Perini's Ranch Steakhouse in Buffalo Gap, Texas, has established himself as a renowned authority on "Cowboy Cooking" across the great state of Texas, throughout the nation, and internationally; and WHEREAS, Perini's Ranch Steakhouse is celebrating its 20th anniversary on Saturday, August 2, 2003, in Buffalo Gap, 12 miles south of Abilene, with a big anniversary party with friends and neighbors; and WHEREAS, Mr. Perini was inspired to become a restauranteur and chuck wagon cook after growing up on the ranch that his late father and mother, Abilene geologist and oilman V. C. Perini and community leader Maxine Perini, purchased early in their marriage; and WHEREAS, Tom has served as chef for heads of state--American, Chinese, and Russian--as well as governors, legislators, congressmen, movie stars, and tourists who make their way to Buffalo Gap for his mesquite-grilled steaks, tenderloins, and prime ribs, and especially his award-winning whiskey sauce bread pudding; and WHEREAS, Tom and his lovely wife, Lisa, have prepared their delicious, award-winning Texas fare in our country's finest kitchens and for ranch events from Maine to California; and WHEREAS, Tom Perini wrote and published a phenomenally successful cookbook entitled "Texas Country Cooking" in the year 2000 that sold 25,000 copies, as well as a secondary printing of 10,000 copies that sold out immediately and yet a third printing of 15,000 that are almost gone with a fourth printing expected; and WHEREAS, Tom Perini, his daughter Caroline Perini--the restaurant manager, his daughter Jessica Perini--a Wylie High School student, and his wife Lisa Perini, who manages the mail order and local catering business of the steakhouse, enjoy the friendship of thousands of good folks across the nation and throughout the world; now, therefore, be it RESOLVED, That the Texas House of Representatives, convened in a special session of the Legislature at this time, hereby congratulate Tom and Lisa Perini and their family and wish them all the best in the years ahead on the occasion of the 20th anniversary of Perini's Ranch Steakhouse in Buffalo Gap, Texas, on Saturday, August 2, 2003; and, be it further RESOLVED, That an official copy of this resolution be prepared for Mr. Tom Perini as an expression of high regard by the Texas House of Representatives.
