R E S O L U T I O N
WHEREAS, In July 2003, a group of Texas legislators enjoyed
an exquisite meal hosted by the renowned Julius' Castle restaurant
in San Francisco, California; and
WHEREAS, Perched atop Telegraph Hill, this fine
establishment had long been a dream of Julius Roz, a former
restaurant counterman and Italian immigrant; his dream became a
reality in 1922, when Julius' Castle was constructed from rich
redwoods and elegant maples; and
WHEREAS, Through the years, the golden pages of San Francisco
history have turned outside its windows; in 1933, the building of
the Bay Bridge was begun and to the east the manmade Treasure Island
was dredged from the bottom of the bay for the 1939 World's Fair;
and
WHEREAS, During World War II, patrons at Julius' Castle saw
the passing gray parade of battlewagons, carriers, destroyers, and
troop ships; in contrast to these heavyweights, the ferries
continued their daily runs in the shadow of the newly built Bay
Bridge; though the ferries retired in 1958, they returned smaller
and faster in the late 1960s to serve the growing suburbs of Marin
County; and
WHEREAS, Over the last 75 years, the Castle has aged and
mellowed gracefully as a part of San Francisco; even though it is
out of the way, people still wind their way to the top of Telegraph
Hill to enjoy the fine food and service at Julius' Castle; and
WHEREAS, The food is consistently superb, cooked with
classical verve, while the extensive Wine and Spirits list is a
consecutive winner of the Wine Spectator's "Award of Excellence,"
and the service is first-class with an efficient blend of quiet
elegance and warmth; and
WHEREAS, The Castle provides a euphoric atmosphere, where one
may linger in soft candlelight, transfixed by a view that is
unparalleled anywhere in the city; to the west, Alcatraz, the
former federal island prison, looms large; along the east shore are
the lights of Richmond, El Cerrito, Albany, Berkeley, Emeryville,
Oakland, and Alameda, and the nighttime view from the Castle is a
sparkling mosaic of multicolored lights on black velvet; and
WHEREAS, Benefiting today from the combined talents of owner
Jeffrey Pollack, manager Milton Saravia, and Chef Robert Cavé, the
restaurant remains a favorite to individuals with a reasoned and
seasoned palate whose loyalty springs from a shared recognition
that some meals are meant to be savored slowly, with a deliberate
and contemplative purpose met admirably in the confluence of
atmosphere, food, and service at Julius' Castle; and
WHEREAS, Designated an Official San Francisco Historical
Landmark, the restaurant has sustained success through eight
decades of changing American tastes and eating habits; with its
outstanding cuisine, attentive service, and outstanding view of the
city, Julius' Castle is truly worthy of special recognition; now,
therefore, be it
RESOLVED, That the House of Representatives of the 78th Texas
Legislature, 3rd Called Session, hereby commend Julius' Castle
restaurant for its culinary achievements and extend to its owners
and staff sincere best wishes for continued success; and, be it
further
RESOLVED, That an official copy of this resolution be
prepared for the restaurant as an expression of high regard by the
Texas House of Representatives.
