H.R. No. 340



R E S O L U T I O N
	WHEREAS, The City of San Angelo and the San Angelo Cookers' 
Association are hosting the Chili Appreciation Society 
International (CASI) Annual Great Peppers Convention on September 
10, 2005, and this event provides a fitting opportunity to 
recognize this nonprofit organization for its many good works; and
	WHEREAS, Dedicated to raising funds for scholarships and 
charities in the United States and abroad, as well as increasing 
public awareness of the historical and cultural significance of 
chili, CASI sanctions more than 500 chili cook-offs annually; the 
proceeds from the cook-offs benefit worthy causes, and in 2004 
alone over $1.2 million was raised; and
	WHEREAS, One of CASI's greatest beneficiaries is the 
community of Terlingua, where in November of each year, those 
participants who have excelled in local and regional cook-offs are 
invited to attend a four-day chili festival that culminates with 
the Terlingua International Chili Championship; not only has CASI 
provided the area with tremendous economic stimulation, but it has 
made generous donations to the Terlingua Volunteer Fire Department, 
Terlingua High School and Library, Terlingua Medics, the Brewster 
County Sheriff's Department, and the Sul Ross Rodeo Club; and
	WHEREAS, The designation of chili as the official State Dish 
of Texas underscores the importance of this indigenous American 
fare to the Lone Star State, and through CASI's charitable efforts 
and its devotion to promoting the unique cultural and culinary 
legacy of chili, the organization has made a Texas-sized impact on 
the lives of countless individuals; now, therefore, be it
	RESOLVED, That the House of Representatives of the 79th Texas 
Legislature, 1st Called Session, hereby recognize the week of 
September 5, 2005, as Chili Appreciation Week, commend all those 
associated with the Chili Appreciation Society International for 
their philanthropy, and extend a warm Texas welcome to the 
attendees of the Annual Great Peppers Convention.
