H.R. No. 24
R E S O L U T I O N
WHEREAS, Larry Foles and Guy Villavaso have tantalized the
taste buds of countless appreciative diners with mouth-watering
cuisine at their popular Austin eatery, Eddie V's Edgewater Grille;
and
WHEREAS, The restaurant is a favorite to individuals with a
reasoned and seasoned palate whose loyalty springs from a shared
recognition that some meals are meant to be savored slowly, with a
deliberate and contemplative purpose met admirably in the
confluence of atmosphere, food, and service at Eddie V's; and
WHEREAS, Established in 2001, the institution was created by
longtime business partners and friends, Mr. Foles and Mr.
Villavaso, who first met in the 1970s in Baton Rouge, Louisiana;
sharing southern roots and a penchant for delicious fare, the two
joined forces to create the thriving Z'Tejas restaurant group,
among other enterprises; and
WHEREAS, Eddie V's Edgewater Grille was inspired by its
founders' admiration for the great classic seafood eateries of New
Orleans, San Francisco, and Boston and is widely regarded as one of
Austin's finest seafood restaurants; the menu offers a delectable
array of grouper, shrimp, mahi mahi, lobster, oysters, and prime
grade steaks, all served under the expert direction of their
executive chef and partner John Carver, whose culinary talents have
earned him recognition as Atlanta's Chef of the Year and have also
garnered the Austin Chronicle's Best New Restaurant award; and
WHEREAS, The food is consistently superb, cooked with
classical verve; recognizing that fine food also requires excellent
presentation, the restaurant owners employ an efficient and
gracious staff who are committed to providing patrons with the
outstanding service they deserve; and
WHEREAS, Eddie V's also serves a wide range of beverages; its
well-stocked bar and extensive wine and spirits list feature
offerings that change weekly and are yet another charming quality
of the restaurant designed to enhance an already pleasurable dining
experience; and
WHEREAS, The Capital City enjoys two bustling locations, one
in the heart of downtown at 5th and San Jacinto, which offers diners
a swanky dinner club atmosphere and live music, and the second
boasting breathtaking views of the Texas Hill Country from the
Arboretum; both locations are expertly managed by regional manager
Tom Farace, with general manager Geoff Freeman overseeing the 5th
Street location and general manager Roger Hernandez supervising the
Arboretum location; and
WHEREAS, Buoyed by their success in Austin, Mr. Foles and Mr.
Villavaso opened a third Eddie V's in Scottsdale, Arizona, in March
2002; and
WHEREAS, Having elevated seafood dining to new heights, Larry
Foles and Guy Villavaso have greatly enhanced the cultural life of
their community and state with their outstanding restaurants, and
they are indeed deserving of special recognition for their ongoing
contributions in this regard; now, therefore, be it
RESOLVED, That the House of Representatives of the 79th Texas
Legislature, 3rd Called Session, hereby commend Larry Foles and Guy
Villavaso for their commitment to providing Central Texans with
exceptional seafood at Eddie V's Edgewater Grille and extend to
them sincere best wishes for many years of continued success; and,
be it further
RESOLVED, That an official copy of this resolution be
prepared for Mr. Foles and Mr. Villavaso as an expression of high
regard by the Texas House of Representatives.
