SENATE RESOLUTION NO. 155
WHEREAS, The Senate of the State of Texas is pleased to
join the City of El Paso in recognizing Leo's Mexican Restaurant
on the momentous occasion of its 60th anniversary; and
WHEREAS, Willie Terrazas, Jr., owner of Leo's Mexican
Restaurant on Remcon in El Paso, is dedicating the anniversary
celebration to the restaurant's founders, his father,
Guillermo "Willie" Terrazas, and his uncle, Leo Collins; the two
men founded Leo's in 1946, when they opened the first Leo's at the
corner of Cotton and Yandell Streets; and
WHEREAS, Sixty years ago, the town had only four Mexican
restaurants, and as soon as Leo's Mexican Restaurant opened, it
was a resounding success; the brothers-in-law offered
distinctive Mexican fare and introduced baked enchiladas and
sopaipillas to appreciative patrons; El Paso now boasts three
Leo's Mexican Restaurants, all of which are run by family members
of the founders; and
WHEREAS, To celebrate the anniversary, Leo's Mexican
Restaurant is sponsoring a Leo's trivia game on local radio
stations, offering gift certificates, and holding a raffle with
prizes such as football season tickets and a weekend getaway
trip; and
WHEREAS, Many generations of Texans have enjoyed the
consistently good food and service offered by Leo's Mexican
Restaurant over the past 60 years; now, therefore, be it
RESOLVED, That the Senate of the State of Texas,
79th Legislature, 3rd Called Session, hereby congratulate Leo's
Mexican Restaurant of El Paso on the grand occasion of its 60th
anniversary and extend congratulations to Willie Terrazas, Jr.,
for continuing a tradition of excellence at his restaurant; and,
be it further
RESOLVED, That a copy of this Resolution be prepared as a
memento of this occasion.
