HOUSE CONCURRENT RESOLUTION
         WHEREAS, Citizens of Sulphur Springs and Hopkins County are
  gathering in Austin to celebrate Sulphur Springs/Hopkins County Day
  at the State Capitol on March 20, 2007; and
         WHEREAS, This rolling Blackland Prairie region was first
  inhabited by the Caddo tribe, and later by the Cherokee; Hopkins
  County was created in March 1846 by the first Texas State
  Legislature, and Sulphur Springs was made the county seat in 1870;
  and
         WHEREAS, While Sulphur Springs was originally a center for
  ranching and the farming of corn and wheat, cotton became the
  predominant crop by the early 20th century; with the opening of a
  milk processing plant by the Carnation Milk Company in 1937, dairy
  farming soon became the major type of farming, and by 1990 there
  were 500 dairies in the county, producing nearly 17 percent of the
  state's milk; more recently, the county has become an important
  location for raising beef cattle and breeding horses; and
         WHEREAS, Originally known as Bright Star, county seat Sulphur
  Springs was renamed in 1871 after the mineral springs in the area,
  and the picturesque county courthouse, in the Romanesque Revival
  style, was built in 1894; it is home to many fine tourist
  attractions, including the St. Clair Music Box Collection at the
  Sulphur Springs Public Library, the Hopkins County Historical
  Museum and Heritage Park, and the Southwest Dairy Center and
  Museum; residents and visitors alike enjoy the city's annual
  festivals, including the Texas State Champion Homemade Ice Cream
  Freezeoff at the Hopkins County Dairy Festival in June and the
  Hopkins County Fall Festival and World Champion Hopkins County Stew
  Contest every September; and
         WHEREAS, Nearby Lake Fork and Cooper Lake State Park provide
  excellent recreational opportunities, and the state park also
  attracts bird-watchers, hikers, and campers; and
         WHEREAS, Scenic and historic Sulphur Springs and Hopkins
  County represent Texas at its best, blending a rich heritage with a
  dynamic future, and it is fitting to take note of this important
  region of the Lone Star State; now, therefore, be it
         RESOLVED, That the 80th Legislature of the State of Texas
  hereby recognize March 20, 2007, as Sulphur Springs/Hopkins County
  Day at the State Capitol and extend best wishes to the visiting
  delegation for an informative and enjoyable stay in Austin.
