R E S O L U T I O N
         WHEREAS, Barbecue is central to the culture and heritage of
  Texas, which is home to some of the best barbecue in the world, and
  Central Texas in particular is blessed with a number of fine
  establishments, including Southside Market and Barbecue of Elgin,
  which is celebrating its 125th anniversary in 2007; and
         WHEREAS, Southside Market was founded in 1882 when William J.
  Moon began to sell beef and pork house-to-house from the back of a
  wagon; in 1886 he opened a permanent business in downtown Elgin,
  where he sold, along with slow-roasted brisket, chicken, and
  turkey, the famous Elgin hot sausage; and
         WHEREAS, Ernest and Rene Bracewell purchased Southside
  Market in 1968, and since then, three generations of the Bracewell
  family have managed the restaurant;  it was moved to its current
  location on Highway 290 in 1992; a favorite destination for
  residents and visitors alike, the market makes and sells 1.5
  million pounds of Elgin hot sausage every year and, through its
  mail-order business, ships barbecue all over the country; and
         WHEREAS, Southside Market also plays an active role in the
  community, supporting local organizations and funding scholarships
  for high school students; the market's 125th anniversary
  celebration on June 2, 2007, features the fifth annual Southside
  Market Sausage Stampede, which will benefit the Greater Elgin
  Chamber of Commerce and the Cattlemen for Cancer Research Patient
  Assistance Fund; and
         WHEREAS, One of the oldest businesses in Elgin, Southside
  Market has long played a vital role in contributing to this Central
  Texas town's official designation as the "Sausage Capital of
  Texas"; now, therefore, be it
         RESOLVED, That the House of Representatives of the 80th Texas
  Legislature hereby congratulate Southside Market and Barbecue on
  its 125th anniversary and extend to all those affiliated with the
  restaurant sincere best wishes for continued success; and, be it
  further
         RESOLVED, That an official copy of this resolution be
  prepared for Southside Market as an expression of high regard by the
  Texas House of Representatives.
