SENATE RESOLUTION NO. 865
       WHEREAS, The Senate of the State of Texas is pleased to
recognize Eddie Marshall, who is celebrating 44 years as a cook
for Arkie's Grill in Austin; and
       WHEREAS, Eddie Marshall has been providing excellent meals
to hundreds of Austin folks who find their way to the East Austin
cafe each day; and
       WHEREAS, He was born in Manor and attended the old Anderson
High School; he began working in the restaurant business at the
age of 17 for the Twin Oaks Cafeteria at South Congress Avenue and
Oltorf Street; and
       WHEREAS, He moved on to the Tallyho Restaurant, which was
located at Congress Avenue and Seventh Street, as a cook; he was
hired by Arkie's founder, Faye Sawyer, in 1963, and he took an extra
job at night training cooks at the Nighthawk Restaurant; and
       WHEREAS, Eddie did not attend cooking school, but with a
skill he first learned from his mother, his on-the-job training,
and his passion for cooking, he has excelled in his vocation; and
       WHEREAS, The citizens of Austin are noted for their love of
great food, which accounts for the continued success of Arkie's
Grill; Eddie Marshall reigns over the kitchen and prepares the
popular meals of turkey and dressing, beef tips and rice, and
chicken and dumplings; now, therefore, be it
       RESOLVED, That the Senate of the State of Texas,
80th Legislature, hereby honor Eddie Marshall as an illustrious
and treasured citizen of Austin and the State of Texas and extend
to him best wishes for the future; and, be it further
       RESOLVED, That a copy of this Resolution be prepared for him
as an expression of esteem from the Texas Senate.
