R E S O L U T I O N
|
|
|
WHEREAS, Burnt Bean Co. in Seguin has earned the No. 1 |
|
|
ranking on the Texas Monthly list of the 50 Best BBQ Joints in Texas |
|
|
for 2025, and the receipt of this prestigious accolade provides a |
|
|
fitting opportunity to recognize the restaurant's founders and |
|
|
pitmasters, Ernest Servantes and David Kirkland; and |
|
|
WHEREAS, Published every four years, the Texas Monthly |
|
|
ratings are considered one of the most definitive assessments of |
|
|
the Lone Star State's barbecue establishments; the 2025 list was |
|
|
compiled by the publication's barbecue editor, Daniel Vaughn, in |
|
|
conjunction with a team of 26 taste testers who visited restaurants |
|
|
across Texas; and |
|
|
WHEREAS, A self-trained chef, Ernest Servantes won his first |
|
|
barbecue cook-off in 2009 and rose to national attention with his |
|
|
victory in a 2012 episode of the Food Network show Chopped Grill |
|
|
Masters; while on the barbecue circuit, Mr. Servantes frequently |
|
|
competed against future Burnt Bean Co. co-owner David Kirkland, and |
|
|
the two pitmasters enjoyed a friendly rivalry before officially |
|
|
teaming up to win cook-offs across the state; and |
|
|
WHEREAS, In 2019, this powerhouse duo launched a pop-up |
|
|
restaurant, which consistently sold out within an hour of opening; |
|
|
despite the pandemic, they took their business to the next level, |
|
|
establishing the brick-and-mortar Burnt Bean Co. in 2020 to wide |
|
|
acclaim; known for its traditional meats, its Mexican-inspired |
|
|
sides, and its rotating brunch menu, the eatery has garnered praise |
|
|
from The New York Times as well as a 2024 Michelin Bib Gourmand |
|
|
Award, and Mr. Servantes and Mr. Kirkland have been honored |
|
|
multiple times as award semifinalists by the James Beard |
|
|
Foundation; and |
|
|
WHEREAS, While many distinctive foods are associated with the |
|
|
Lone Star State, barbecue holds a special place in our culinary |
|
|
heritage, and Burnt Bean Co. has truly elevated this iconic fare to |
|
|
new heights; now, therefore, be it |
|
|
RESOLVED, That the Senate of the 89th Texas Legislature, 1st |
|
|
Called Session, hereby congratulate Ernest Servantes and David |
|
|
Kirkland on the selection of Burnt Bean Co. as the No. 1 restaurant |
|
|
in the Texas Monthly 2025 list of the 50 Best BBQ Joints in Texas and |
|
|
extend to them sincere best wishes for continued success; and, be it |
|
|

RESOLVED, That official copies of this resolution be prepared |
|
|
for Mr. Servantes and Mr. Kirkland as an expression of high regard |
|
|
by the Texas Senate. |
