R E S O L U T I O N
|
|
|
WHEREAS, Mixtli in San Antonio has earned an American |
|
|
Automobile Association Five Diamond Restaurant rating for 2025; and |
|
|
WHEREAS, Founded in 1902, AAA is a U.S. federation that |
|
|
offers a variety of travel guides and resources to its more than 57 |
|
|
million members; each year, the organization's certified auditors |
|
|
conduct anonymous inspections of hotels and restaurants across the |
|
|
United States, Canada, Mexico, and the Caribbean and score them on a |
|
|
rating scale of three to five diamonds; to earn the top distinction, |
|
|
restaurants must pass a rigorous 57-component assessment that |
|
|
encompasses criteria ranging from innovative cuisine to |
|
|
cleanliness and hospitality; and |
|
|
WHEREAS, Mixtli is the only restaurant in the State of Texas |
|
|
to ever be recognized with a AAA Five Diamond rating; founded by |
|
|
Rico Torres and Diego Galicia in 2013, the fine dining |
|
|
establishment features an evolving menu that explores the richness |
|
|
and regional diversity of Mexico's gastronomic landscape; it |
|
|
previously received a star rating in MICHELIN's inaugural Texas |
|
|
guide, and its owners have been nominated for three James Beard |
|
|
Awards since 2018; and |
|
|
WHEREAS, Mixtli has established itself as a shining star in |
|
|
San Antonio's food scene, and the restaurant's ownership, |
|
|
management, and staff may indeed take pride in this impressive |
|
|
accomplishment; now, therefore, be it |
|
|
RESOLVED, That the House of Representatives of the 89th Texas |
|
|
Legislature hereby congratulate Mixtli on earning an American |
|
|
Automobile Association Five Diamond Restaurant rating for 2025 and |
|
|
extend to all those associated with the restaurant sincere best |
|
|
wishes for continued success; and, be it further |
|
|
RESOLVED, That an official copy of this resolution be |
|
|
prepared for the restaurant as an expression of high regard by the |
|
|
Texas House of Representatives. |
